Yield: 12 – 24 burgers (depending on size)

Ingredients

  • 1 sweet potato
  • 3 cups quinoa
  • 3 medium beets
  • 1 cup diced onions
  • 1 diced tomato
  • 1 cup nutritional yeast
  • 1 tablespoon fresh minced garlic
  • 1/2 cup vegetable broth
  • 1 vegetable bouillon cube

Instructions

  1. Peel and cube sweet potato and boil until soft.
  2. Cook quinoa according to package directions.
  3. Wash the beets and grate with hand grater or food processor.
  4. In a heated, oiled skillet (let simmer for 5 minutes) add the rest of the ingredients.
  5. Mix the skillet mix into the quinoa.
  6. Then, in a large bowl mix all ingredients and form into sliders (or any size you want).
  7. Bake in pre-heated oven on parchment paper, cook 15 minutes on each side, serve warm with you favorite burger toppings.

Notes

Great for freezing, thaw out when ready to warm up!
